Tucked away in the heart of the brewery, the Henry Simm Room offers an amber lit, intimate escape for those who like their gatherings with a side of ambiance. Inspired by the timeless charm of a whisky lounge, this space is designed for slow sips, deep conversations, and unforgettable moments.
Named after Henry Simm, the convict ancestor of our Owner, who inspired Thieves Collection, this room pays tribute to his legacy. After arriving in Fremantle in the 1800s and living within the walls of the old prison, Henry began crafting spirits using a Scotch recipe passed down through generations. Today, his story lives on through every pour, and this space captures the mood of that heritage, layered, bold, and full of character.
Perfect for cocktail receptions, private tastings, milestone celebrations, or late-night meetings, the Henry Simm Room delivers atmosphere in spades. Let the scent of oak and the soft hum of a curated playlist set the tone for a moody, indulgent experience.
